cherry almond granola
dry ingredients:
2.5 cups old fashioned rolled oats
1 cup brown rice cereal (erewhon)
1 cup almonds
1/2 cup pepitas (pumpkin seeds)
2 heaping tbsp sweetened coconut flakes
2 tsp ground cinnamon
1/2 tsp nutmeg
1/2 tsp kosher salt
wet ingredients:
4 tbsp brown rice syrup
1 tbsp coconut oil
1 tbsp agave nectar
2 tbsp natural peanut butter
2 tbsp unsweetened applesauce
1/3 cup packed brown sugar
add-ins:
1 cup dried sour cherries
pre-heat oven to 300 degrees and line an insulated baking sheet with parchment paper.
combine dry ingredients in a large bowl.
in a small saucepan, heat wet ingredients over medium heat. bring to a boil, stirring often. once boiling, turn heat to medium-low and simmer, stirring often, for 8-10 minutes.
pour wet ingredients into dry ingredients and combine until well coated.
spread mixture evenly onto parchment paper and bake for 45 minutes stirring every 15 minutes.
let cool in pan and then crumble into an airtight container.
yields approximately 20 1/3 cup servings
