mom's soup meat ~ slow cooker

my mom's soup meat is amazing.  probably not super nutritious but, super delicious.  it's one of those meals i feel okay about eating "every now and then" because it's an old favorite ("memories, like the corner of my mind") but it calls for canned and dry soup mix (= sodium) which i normally try to avoid.

she has made it for my family little family after my babies were born so when i eat it, it makes me feel happy.  happy memories. 

earlier this week i made it for one of our neighbors who just brought their baby girl home from the hospital.  

as the relief society president, my mother in law makes it often for families in need and it always gets rave reviews.  my kids love it.  my husband loves. 

it's time to share the recipe here.

mom's soup meat
2.5 lb - 1/2 round steaks, cubed
1 tbsp olive oil
2 cans golden mushroom soup (14oz)
1 packet lipton's dry onion soup mix
2 cups of apple juice (i usually just fill one of the soup cans full and that seems to be enough)

heat olive oil in a large, heavy bottom skillet over medium-high heat.

brown 1/2 the meat until no longer pink (seasoned with salt & pepper).  remove with a slotted spoon, set aside and brown the other 1/2 the meat. drain.  

place both batches of browned meat in the bottom of the slow cooker.

in a medium bowl, stir remaining ingredients together and then pour over the meat in the crock pot.


cook on low heat for 8 hours.


serve over rice or egg noodles (or both).
